White chili is the appropriate category, but yellowish chili most accurately describes this dish.

  • chicken (and chicken broth if crockpot cooking)
  • 2 (13.5 oz) cans great northern beans
  • 1 (7 oz) can medium diced chilis
  • 1 cup shredded extra-sharp cheddar cheese
  • 1 cup sour cream
  • 1 cup corn
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • 1/2 tsp pepper

Add (cooked and drained) chicken to all other ingredients and put on low heat for 2 1/2 hours or so.

Georgia Peachy Sweet Tea

Divide 64 oz water up into 48 oz in a pitcher and 16 oz in a mug. Allow 2 large cold brew iced tea bags to steep in the pitcher while microwaving water in the mug with 2 peach herbal tea bags. After removing tea bags, add a tablespoon of raw sugar to the pitcher and 12 healthy squeezes of honey to the mug. Add mug of peach tea to pitcher of iced tea, chill, and voilà!

Asian Popeye Fav

  • 2 cans of spinach
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon garlic powder

Heat spinach, then wring out ALL water. Every bit. (This tastes awful when watery. Don’t ask me how I know this.) Combine ingredients and serve.

Spicy Eyesight Sharpener

  • one bag of baby carrots
  • 2 tablespoons EVOO
  • 2 tablespoons  butter
  • 1 tablespoon thyme 
  • ½ teaspoon cumin 
  • ½ teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • sea salt and ground black pepper to taste

Mix EVOO and melted butter with thyme, cumin, coriander, turmeric, chili powder, and sea salt/black ground pepper. Place carrots in one layer on the baking dish and coat with mixture.  Roast at 425* for 20 to 25 minutes, stirring the carrots every 10 minutes. They should be slightly caramelized and tender when done.

  • one bag of baby carrots
  • 4 tablespoons butter
  • 4 tablespoons honey
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon lemon juice
  • 1/4 teaspoon sea salt

Melt butter and mix with honey, brown sugar, nutmeg, lemon juice, and salt. Coat carrots. Cover and microwave on high for 6 minutes. Stir and microwave on high for 6 more minutes.

Balsamic Chicken dans Crock Poterie

  • chicken
  • 1 package sliced mushrooms
  • 6 white pearl onions
  • 1 cup chicken broth
  • 3/4 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 3 tablespoons tomato paste
  • 1 tablespoon EVOO
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme
  • 1/2 teaspoon basil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon parsley
  • 1/4 teaspoon sea salt

Before adding chicken, mushrooms, and onions, combine all other ingredients in crockpot. Once everything’s added, cook until chicken is done. Once done, solids can be strained and liquid boiled down to a sauce with thicker consistency. Serve with mashed potatoes.

Massaman-ish Chicken

My shortcut to preparing a dish that resembles this Thai delight:

    • chicken
    • 1 3/4 cups canned coconut milk
    • 2/3 cup water
    • 2 tablespoons lemon grass paste
    • 2 tablespoons ginger paste
    • 1 tablespoon tamarind paste (or brown sugar and = part lime juice)
    • 1 tablespoon peanut oil
    • 1 tablespoon cardamom
    • 1 tablespoon cumin seeds
    • 1 tablespoon onion powder
    • 1 tablespoon ground coriander
    • 1 tablespoon ground ginger
    • 2 teaspoons brown sugar
    • 1 teaspoon black pepper
    • 1 teaspoon sea salt
    • 1 teaspoon garlic powder
    • 1/2 teaspoon ground cloves
    • 1/2 teaspoon chili powder
    • 1/2 teaspoon red chili pepper flakes

Combine ingredients and simmer. Add sauce to cooked chicken, then top with cashews and fresh avocados. Serve with white rice.
